Ricotta Toasts

Strawberry balsamic toasts with ricotta cheese

Strawberry, Balsamic Ricotta Toasts


  • 1 baguette, sliced into ½ inch pieces
  • 1-2 T extra virgin olive oil
  • 1 c ricotta cheese 
  • 1 pint (12 oz/2 cups) strawberries, hulled and sliced
  • 1 T balsamic vinegar
  • 1 T sugar
  • ½ T black pepper
  • 2 T fresh micro basil (or normal basil, chopped)


1. Preheat the oven to 425 degrees F.

2. In medium bowl, gently toss the strawberries with sugar, balsamic vinegar, and black pepper. Set aside for 20 minutes.

2.  In the meantime, slice the baguette into ½ inch pieces and brush them with olive oil.

3. Place the baguette slices in a single layer on a baking sheet and bake for 4-6 minutes until the bread is golden-brown and crispy.

4. To assemble, spread the ricotta onto each toast and top with the balsamic strawberry slices.

5. Drizzle toasts with a light amount of left over strawberry balsamic syrup.

6. Finish by garnishing with micro basil leaves (or chopped basil). Serve immediately.
